Eclipse - Las Lajas Finca Mirella

This micro-lot Caturra and Catuai coffee from Oscar and Francisca Chacón's Las Lajas Micromill in Costa Rica’s Central Valley is processed using the innovative Perla Negra Natural method. Cherries are dried on raised beds in a thin layer, rested in the shade, and then dried again in a greenhouse patio, making for an extremely slow drying process. This meticulous technique brings out dark fruit notes and a sweet fermented character, with a smooth caramel finish.
