Pepe Jijón is one of the most celebrated names in specialty coffee, and this Sidra variety from his farm, Finca Soledad, is a testament to his meticulous craftsmanship. Located in the Intag Valley of Ecuador, the farm is a cloud forest sanctuary where Jijón applies his unique Wave Honey processing. This involves a carefully managed temperature-wave fermentation followed by a slow, dark-room dehydration that stabilizes the beans for up to 50 days. This gentle approach preserves the delicate cellular structure of the rare Sidra hybrid, resulting in a cup of exceptional clarity and layered sweetness. The profile is remarkably crisp and luminous, featuring vibrant notes of green apple and white grape with a tart, structured currant finish.
